Gouache is an interesting material to work with. You can water it down to near watercolour levels, or keep it very heavy like acrylic. If you're more comfortable using either of those two types of paint, try matching your gouache to it. I've heard going from light to dark helps too! I could point you in the direction of some great gouache videos if you'd like
