This is kind of random, but please share your favorite gluten free, dairy free, and anti-inflammatory recipes.
For years I have been battling severe eczema. I had this condition since I was a baby, but as I got into my late 20’s, my condition got worse.
These past 3 weeks I have been unable to get my necessary medication because American Health Care sucks. Last Friday I was at the point where I was in pain, I was itchy, my skin was lobster red, open sores were forming on my skin from the condition, and other unpleasant details. I was at the point of deciding to go to Urgent care because it was getting so bad. No over the counter creams could alleviate the condition. The next day on Saturday I immediately switched over to a gluten free, dairy free, and anti-inflammatory diet and exclusively only ate foods that had omega 3 and foods that combat inflammation. I was desperate for any kind of relief. I’m always at war with my body.
It’s been 5 days and the results were almost immediate. By the third day I saw a difference. My open wounds are almost healed, my skin is less red, and the itching has stopped. It became apparent to me that I have a lot of food intolerance and most foods that we eat in todays North American society has been destroying my body.
But now that means changing my normal meal and eating routine, which is difficult for an ASD/ADHD individual. So any meal or recipe recommendations is deeply appreciated.Sep 21, 2023

I'm so sorry to hear that! I'm no expert but maybe I can give you some inspiration.
One of the easiest recipes I know is: Whatever vegetable you have at hand + a can of kidney beans + rice. Just saute the vegetables, add the beans and then the rice and you have a quick meal ready! And you can use brown rice instead of white rice to help fight inflammation
Oh and I also like eating eggs + cabbage. Just slice some cabbage as thinly as you can, add two eggs, some seasoning of your choice and cook everything in a pan. You can eat it as is or add rice or potatoes!

•I'm not too savvy with nutrition and whatnot, but apparently spices have antioxidant qualities? I've been craving vermont/japanese curry a lot lately haha, and you can get them mild :D It's pretty simple to make too hehe
That sucks so much that you've experienced a bad eczema episode :( I hate that there's not really a cure for it either. I'm glad you've found something that settles it down for you! I hope you find some nice recipes hehe
