

Artfolmas 18 Celebrating your loved ones
Well I thought how better to celebrate my great grandma than with the recipe I connect the most with her.These are walnut biscuits my great grandma Line (a nickname we all called her with, Oma Line rolls better in german though ^u^) made and I’ve been making them for the third time now I think.
Plätzchen is the German word for Christmas biscuits by the way, kind of a catch all term.
A few notes on the recipe:
The original is from an old magazine clipping so I have no idea wich magazine it was from.
• The recipe will get you ~30 of them depending on the size you make them.
• You can vary the amount of nuts you mix in. I did ~150 grams this time and they still taste as they should, just go with what you’d like.
• Vanilla sugar, the packeted one will do fine but we have a jar with sugar and some empty vanilla pods in there. So measurement wise it’s usually just dumping some in, roughly two to three teaspoons I think.
• the wafers are optional, though for me they are part of the taste and you’ll have an easier time getting them off the baking paper without breaking them.
Our wafers have a roughly four ish centimeter diameter and to get the size of the biscuits just right pile the eggwhite mass so that you can still see bits of the wafer. Even if it seems too little it usually is just fine ^-^
• the water bath mixing is not optional. My ma did them without it and they just made puddles on the baking tray.
I don’t think it’s too much of a hassle, just pay attention that your bowl can stand some heat (I used a smaller saucepan).
• adding the walnut halves on top of the biscuits before baking is also optional. I did forget them this time ^-^“
• smashing the walnuts that go in the biscuits in a bag with a rolling pin gets me a nice slightly chewy middle I think … might also just be my timing when taking them out our our oven … I don’t know, just feels nicer, though feel free to get your walnut bits however you like.
