It might be worth to look into how international the payment methods are as well, depend on how wide you want your audience to be. Not all payments might be available in other countries.
It's the reason I personally use paypal. It's the only one I know of available for me.
I can recommend writing a tos, everything to protect yourself. What you will and won't draw as well.

Etsy, PayPal, Ko-fi, depop, cash/check if it's in person. The more payment options you accept, the better.

Ko-fi isn't a payment method. You'll still need a PayPal or stripe to do transactions. Ko-fi is just a convenient place to open and upload examples of commission work, put stuff in your shop and upload supporters exclusive content.
Maybe go to YouTube and see the terms of service people use. Some people let you copy theirs. You can also watch commission horror stories to know what stuff you should look out for.
