Currently my plan is to make around 8 different stickers and sell about 30 each, but I’m not sure if that’s considered too much or too little considering the active following I have on instagram, tumblr and here on ArtfolFeb 9, 2022

Sounds like a good starting amount to me 
sometimes you don't know until you start selling honestly. If you have the budget and storage space for 240 stickers, you should be fine. My main advice is just to not go over budget. So even if it turns out to be too much/too little, its not a big issue.
