I like sketchbook vids, art style analysis, comic process and drawing videos that show the tablet and the hand but I also mostly like to watch love2drawmanga and lavendertowne sometimes drawingwiffwaffles and drawfee. They’re quite different in terms of style but I just find their content enjoyable and I find their voiceovers to be engaging enough. So as long as it is enjoyable i’ll watch it 
but that’s just how I personally feel tho :’)

I watch Peter Knetter, not really an art channel, but sometimes he makes video about drawing or using blender, it's funny.

Like, analysis? Like what makes an illustration interesting, the composition, elements, colors, shapes, stuff like that

I like to watch those art style analysis videos, it's interesting to see how they break down the art style and tries to replicate it

Not 100% art content but atm it’s definitely world building stuff from channels like Monstergarden, Treelancer and Subjectively
Other than that I watch anything character design related or people talking about their process
