I mean, they legally can't hide it haha. That's why you're seeing the notifs now, they got sued for hiding it (bc they've been doing it secretly FOR YEARS). They lost the suit so now they have to disclose it.

Now we just have to live with the horrifying knowledge..." well you can get cookie blocking browser apps on mobile like DuckDuckGo and use private browsers like Mozilla on PC. DDG even has a new function in open beta that blocks tracking across apps. Assumung it's working it's pretty neat. (YouTube's tracking attemps are DISGUSTING. Last I checked DDG claimed to have blocked 4000+ attempts in the last hour)

lowkey i just use a modified client to watch yt without ads or pop-ups or bs on my mobile then uBlock on my pc

And the decline isn’t even a decline option. It’s “say yes” or “ask for app not to track” like we have to ASK THEM not to track us what the fuck
