The other person talked about the global fonctionnement, I'll talk about the pricing :)
I personnaly do traditionnal commissions, so I set my prices depending on :
- my estimated level
-the time I spend on it
- the materials I use
- the fact that I have to send the product by mail
That helped me to fix fair prices ( between 10 and 20 euro for the moment)
What you can do to be even more specific is, with the time you spend on it, search for the minimal wage per hour of your country to have an approximal idea of what your art would legally worth with the time you spend on it
Of course you don't HAVE TO set your prices with that, but it can help you have a clearer idea

•Online commissions are pretty easy! Just make a sheet with your prices, usually people have options for sketches, lineart and full color, or other times they have bust, half body and full body. I’ve seen people do both! Then list what you will and won’t do and what you’re really good at. Lastly put your method of payment, most people use PayPal, and make sure to take 50% of the payment before giving the customer their final product! Traditional commissions are the same as digital ones, you just need to mail the piece to your customer so make sure to get their address. You might want to take shipping fees into account when you list prices too lol. Also include examples on your sheet. Hope this helped! sorry if i over-explained anything
