yeah you should definitely cover it asap after using it! if it doesn't get eaten right away, I cover it right after eating and refrigerate
also make sure u rinse your rice before cooking, it helps a ton with it getting too crunchy!

If it’s already cooked it sometimes does. But I think that also depends on the type of rice.
