Can't say I'm a pro plant eater to recommend any recipe, but I enjoy some soy hamburger UwU
And carrot salad, carrot cake... And anything carrot based.
Oh, as recipe, I've been putting some peanut to some salads, with carrot and "opio", Idk that last one name in english, but it's a green veggie.
I could say other greenies but I'm not familiar with the english names

•I sometimes eat plant based, my favea atm are my own version of buddha bowl and nachos. For both I use soy protein granules (?) That I season with taco seasoning, onion, paprika, mushrooms and spinach (cut those very small if you are not sure you like the taste/texture).
For buddha bowl kvinoa, taco soy, oven baked broccoli, sweet potato, turnip/rutabaga, beans, carrots and what ever else I want, then I add fresh salad, corn etc avokado is must and garlic hummus but I would say any creamy sauce does. For nachos I have regular nachos, then on top of that the soy thing and I usually also add cheese and then bake but that is optional and top it with red onion, avokado etc that you like
