I made some apricot jam for a bake recently, but uh, I made WAY too much.

You could try variations of "Kuppeltorte" (Dome Cream Cake/Dome torte).
It's pretty cool, basically a chocolate cake with jam layer, chocolate cream and a marzipan dome you stack together upsidedown in a lined bowl and then flip~
If that's too much work, just making the chocolate cake with the jam (and some cream if you are feeling like it) also slaps ^u^
Will just have to go get my grans recipie and translate it, so might take a sec

•I’m not a big jam person but I do like to make cookies. I’ve made thumb print cookies using different jams before and my friends always love them. There a basic sugar cookie so I bet apricot jam would be a tasty jam flavor to use.
