I’m on the VERYYYY last question of an assignment for class and it suddenly feels impossible 
it’s not even that difficult so why can’t I just. Do the thing. Get the work done so I can hand it in! Then I won’t have to worry !

"Last thing to do" syndrome is something I've been through as well. The way to go about it? First, stop thinking of it as a life defining event. The less important it will be in your eyes, the easier it will be to complete. When you mark something in your head as super-important, your brain keep re-evaluating the task multiple times to asses all possible risks. School assignments, for the most part, are not life defining. In contrast, breaking the law and going to jail for it is life defining. Making slightly worse grades at school isn't.
